When Everything Clicked

“Aunt Claire, why does good-for-you food taste like punishment?”

My six-year-old nephew wouldn’t touch his vegetables, and I was stunned. I’d spent years as a pastry chef making desserts people raved about—but I couldn’t impress a child with broccoli. That same night, my friend Linda texted photos of her teen pushing around yet another “healthy” dinner. “Why does nutrition assume we have hours and a gourmet kitchen?” she asked.

Over coffee, an idea clicked: what if the techniques that made desserts irresistible could work for vegetables too? Six months of experiments later, we launched EdenPlate—not because healthy food is easy, but because it shouldn’t be boring. Now our kids actually get excited about dinner, and we still marvel at that.
